Bruschetta
Makes approximately 16 - A perfect appetizer, and it’s yours in no time.
Ingredients
2 vine ripened tomatoes, diced
1 clove garlic, minced
3 or 4 large fresh basil leaves, coarsely chopped
1 teaspoon fresh lemon juice
2 tablespoons olive oil
Salt and pepper to taste
4 ounces soft goat cheese
French or Italian bread, sliced crosswise about 1/4 inch thick
Directions
Preheat broiler
Mix all ingredients except bread and goat cheese in a medium bowl
Spread about 1 tablespoon of goat cheese on each bread slice
Top with tomato mixture
Place on baking sheet and place under broiler about 4 minutes
Make sure it doesn’t burn
