Who needs mayo when a potato salad tastes this good? Not me...
Ingredients
- 1 tablespoon salt
- 2 pounds small white or red (or both) potatoes
- 1/2 cup celery, diced
- 1/3 cup green onion, diced
- 1/2 cup red onion, diced small
- 3 tablespoons parsley
- 5 hard boiled eggs, peeled and sliced
- 10 pieces bacon, crispy and diced up
- 1/3 cup bottled Honey Mustard dressing
- Salt & pepper to taste
Directions
- Bring a large pot of water to a boil, add salt and potatoes
- Cook until potatoes are tender enough to poke a knife through easily
- When the potatoes are cool enough to handle, cut into quarters and put in a large bowl
- Add everything else and mix well
- Serve cold or at room temperature
