Kate's Mom's Salmon

Actually, it's from her mother-in-law. Kate calls this 'The Best Recipe in the World' - that's a pretty darn big title for such a simple & quick dish, so you decide.
Ingredients
- 4 salmon fillets
- Sauce:
- 1/4 cup soy sauce
- 1/4 cup mirin - Japanese cooking sake
- 1/4 cup water
- 1/4 cup white sugar
- 1 inch grated ginger
- For garnish:
- Thinly sliced green onions & sesame seeds for garnish
Steps
- Put sauce ingredients in nonstick skillet and heat until the sugar has dissolved
- Add salmon to pan (skin-side down, if there is skin)
- Cover and turn heat to low - cook 5 minutes
- Turn fish over and cover - cook an additional 5 minutes
- Serve with green onions on top
