Serves 6

As great as brisket is for dinner, it's fantastic and arguably better the next day for sandwiches.

Ingredients

  • about a 5 pound beef brisket
  • 4 cloves garlic, minced
  • 3 tablespoons oil
  • 1-12 ounce can tomato paste
  • 3/4 cup brown sugar
  • 2 tablespoons Dijon mustard
  • 1/2 cup soy sauce
  • 3 onions, thinly sliced

Steps

  1. Preheat oven to 325
  2. Mix garlic and oil and rub over brisket
  3. Combine remaining ingredients except onions and mix well
  4. Rub over top of brisket
  5. Put half the onions in roasting pan, brisket and then top with remaining onions
  6. Cover tightly with lid or foil and bake 2 1/2 to 3 hours or longer until fork tender
  7. Let cool slightly and slice across grain and serve
