Shepherd's Pie
Serves 8
This is a great comfort food. Perfect for those cooler evenings.
Ingredients
- 1 small onion, diced
- 1 - 10 ounce package frozen baby peas, defrosted
- 1 pound cooked roast beef, thick pieces are best
- 6 ounces already made beef gravy
- 1 - 4 ounce package instant mashed potatoes, plain
- 1 - 2 ounce package ready bacon, diced fine
- Kosher salt and freshly ground pepper to taste
- Olive oil
Steps
- Preheat oven to 400 degrees
- Heat large skillet on the stove, add oil and onion and cook until softened, then add peas for a minute
- While onion is cooking, chop beef into smallish dice and add to onion mixture to heat through
- Put beef mixture in a large bowl and add gravy - stir well
- Cook bacon briefly (just to crisp slightly) in the skillet that the beef came out of
- Make potatoes according to package directions, season with salt and pepper and stir in bacon
- Place beef mixture in bottom of a 9X9 casserole dish and top with the potatoes
- Place in oven about 30 minutes until top browns and serve
