Makes 6 small burgers

These are awesome...on the grill, in a pan - just make 'em

Ingredients

  • 1 lb lean ground beef
  • One - 2 ounce package ready bacon, cut into small pieces
  • 1 to 2 teaspoons seasoning salt
  • 2 ounces blue cheese crumbles
  • 2 ounces cream cheese
  • Olive oil
  • Freshly ground pepper to taste
  • Small buns

Steps

  1. Microwave the bacon pieces for 45 seconds or so until crisp
  2. Place the beef in a bowl and add the season salt and bacon pieces and mix together really well
  3. Divide the mixture into 6 even sized balls, then split each ball in half to make two small ones that you can shape into two small patties
  4. In a small bowl add even amounts of cream cheese and blue cheese crumbles and microwave for about 20 seconds to soften so you can mix together really well
  5. Drop about a teaspoonful of the cheese onto one patty and spread it but not too close to the edge so you can top with a second patty and seal them together by pinching the edges really well
  6. Preheat a nonstick skillet, griddle or electric grill pan really well (or bbq them if you got one)
  7. Rub each patty with a little olive oil and sprinkle with freshly ground pepper to taste
  8. Place on the heated grill and cook on each side for about 3 minutes or until done
  9. While that is going on preheat the broiler and slice the buns in half
  10. Place them on a baking sheet and broil for 2 or 3 minutes so they crisp a bit
  11. Once the burgers are cooked put one on each bun
  12. Reheat the left over blue/cream cheese mixture in the microwave and serve on the side to dip
