Serves 6

Feel free to make this using fresh red peppers and going through the whole roasting, steaming, peeling, cleaning and chopping process. Or - you could just use the delicious ones that are already roasted and in a jar and be done in about 15 minutes. But it's up to you?

Ingredients

  • 2-12 ounce jars roasted red peppers
  • 1 tablespoons olive oil
  • 1/2 cup onions, diced
  • 2 garlic cloves, minced
  • 3 cups chicken broth
  • 1/2 tsp cayenne pepper
  • salt & pepper
  • sour cream
  • freshly chopped cilantro

Steps

  1. Drain peppers well in a colander
  2. Saute onions & garlic in olive oil in a large pot until softened
  3. Add peppers and cayenne to onions and mix well
  4. Put pepper mixture in a food processor with about a cup of the chicken broth and process until smooth
  5. Put mixture back into pot with remaining stock
  6. Season to taste with salt & pepper and heat through
  7. Simmer 10 minutes
  8. Serve in bowls (hot or cold) with a spoonful of sour cream and some fresh chopped cilantro
