Roasted Red Pepper Soup
Serves 6
Feel free to make this using fresh red peppers and going through the whole roasting, steaming, peeling, cleaning and chopping process. Or - you could just use the delicious ones that are already roasted and in a jar and be done in about 15 minutes. But it's up to you?
Ingredients
- 2-12 ounce jars roasted red peppers
- 1 tablespoons olive oil
- 1/2 cup onions, diced
- 2 garlic cloves, minced
- 3 cups chicken broth
- 1/2 tsp cayenne pepper
- salt & pepper
- sour cream
- freshly chopped cilantro
Steps
- Drain peppers well in a colander
- Saute onions & garlic in olive oil in a large pot until softened
- Add peppers and cayenne to onions and mix well
- Put pepper mixture in a food processor with about a cup of the chicken broth and process until smooth
- Put mixture back into pot with remaining stock
- Season to taste with salt & pepper and heat through
- Simmer 10 minutes
- Serve in bowls (hot or cold) with a spoonful of sour cream and some fresh chopped cilantro
