ST. PATRICK'S DAY RECIPES

Check out my Irish inspired recipes to get ahead of the game for this St. Patrick's Day, Saturday March 17th 2018. All easy, hearty dishes, make a couple for dinner... of make em all, if you are having a party!

But first... go pour that glass of Guinness!

Perfect to feed a big hungry mob for St. Pat's Day. But, whether you are Irish... or whatever you are, you have to make this, it's the ultimate comfort food and easy family meal pleaser.

This is just a guide – you can add almost anything to mashed potatoes – goat cheese, sour cream, bits of roast beef, bacon & blue cheese, rice pudding, quickly sauted vegetables, crunchy rice noodles – by the way I was just kidding about the rice pudding.

For some reason, corned beef is usually only thought of at home for St. Patrick’s Day, which is a crying shame. This has only five ingredients, is a snap to make, and the glaze really adds a ton of flavor. Make yourself a promise to make it more often. You’ll be so glad you did.

A Healthier Meal After All That Halloween Candy

So after consuming all that candy, it might be time for something slightly healthier.  Here’s my suggestion for a build-your-own Quesadilla party. Kids love-making things themselves, so you simply put everything out and let them put it together the way they want – but you do the cooking.

Getting started:

Put out a variety of fillings and let the kids build their own Quesadillas. The choices can include:

  • Mixed, shredded cheeses
  • Diced turkey, chicken or steak
  • Black beans
  • Grilled or roasted veggies — zucchini, onions, carrots, squashes
  • Raw veggies — avocado, peppers, corn kernels, tomatoes
  • Leaves — spinach, cilantro
  • Pineapple, mango, pear
  • Tortillas — whole wheat, spinach, red pepper

How to make?

  1. Start with a tortilla, add a little cheese – the cheese will act like glue and hold everything together.
  2. Then simply add your favorite fillings, a little more cheese and top with another tortilla.
  3. Squish down and cook in a non-stick pan over medium heat on both sides, until lightly browned, warmed through and melty (by the way – no oil is necessary for cooking and of course is way healthier).
  4. Cut into wedges and serve with non-fat Greek yogurt (instead of sour cream), salsa and diced avocado.
