Green Chili & Bacon Cornbread

Green Chili & Bacon Cornbread

Ingredients

  • 3-4 Hatch Green Chills
  • 1 1/2 cups cornmeal
  • 1/2 cup all purpose flour
  • 2 tablespoons sugar
  • 1.5 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 1/2 cups milk
  • 3/4 stick butter, melted
  • 1 cup shredded cheddar cheese
  • 1/2 pound bacon, cooked & crispy

Directions

  1. Preheat oven to 425
  2. Lightly oil chills and put on the bbq until blackened all the way around, then remove burnt outer skin, discard stems and seeds and cut into a medium dice
  3. Put cornmeal, flour, sugar, baking powder & salt in a large bowl - mix to combine
  4. Beat eggs, add milk and butter, stir then mix into the dry ingredients - then add the cheese, bacon and chilis - combine well
  5. Butter an 8 or 9 inch square or round pan, add the batter and bake 25 minutes or until a toothpick comes out clean
