My Mom's Lemon Chicken

My Mom's Lemon Chicken

Ingredients

  • 1 cup all purpose flour
  • 1/2 teaspoon each garlic powder, smoked paprika, kosher salt, coarsely ground pepper
  • 1/4 teaspoon cayenne pepper
  • 4-6 chicken thighs, bone-in & skin on
  • 2 tablespoon butter
  • 1 tablespoon oil
  • One 12-ounce can lemonade frozen concentrate, defrosted
  • 3 tablespoons brown sugar
  • 3 tablespoons white vinegar

Directions

  1. Preheat oven to 350 degrees
  2. Put flour, garlic powder, paprika, salt, pepper & cayenne in a large zippered bag - mix well
  3. Add chicken pieces one at a time, zip shut and shake well to coat chicken evenly, put on a plate
  4. Put butter and oil in a large, oven proof pan (this guy would be perfect) and heat to medium/high
  5. When the butter is melted, add chicken skin side down, and cook until golden brown 15-20 minutes
  6. Flip over and cook on the bottom 5 minutes
  7. In a bowl put lemonade, brown sugar & vinegar - mix well to combine
  8. Turn chicken back to skin side down, add the lemonade mix and put in the oven - cook 20ish minutes or until chicken is about 165 degrees
  9. Flip over to skin side up, add a lemon slice to each and baste a bit with the sauce
  10. Put back in oven until chicken is 175 degrees
  11. Remove, plate and…you know what to do
