24 Hour Chuck Roast

Ingredients

  • One 3-4 pound chuck roast
  • Kosher salt & coarse ground black pepper
  • Olive oil
  • Sous vide water bath

Directions

  1. Vacuum seal the steak
  2. Set sous vide to 130, for medium rare
  3. Drop in the steak and leave for 24 hours and reserve the bag juices
  4. Take the beef out, dry it like your life depends on it (moisture is the enemy of crust) then season liberally with the salt & pepper. Reserve the bag juices
  5. Get a pan screaming hot. Add oil, then the beef. Sear hard on all sides until you get a real crust. Don’t baby it - remove
  6. Use any, and every way you can think
