Air Fryer Breakfast Corn Dogs

If a hot dog married a pancake at brunch, this would be their crunchy golden baby. Weird, yes? Delicious, oh fxxk yes!

Ingredients

  • 8 cooked breakfast sausage links
  • 1 cup 'just add water' pancake mix
  • 1/2 cup milk
  • 1 egg
  • 1 teaspoon sugar
  • 1 cup crushed Corn Flakes
  • 1 cup all purpose flour
  • Cooking spray
  • Skewers, I used cut-off chopsticks
  • 1/4 cup maple syrup (find a boozy one if you can)
  • 1-2 tablspoons Dijon mustard

Directions

  1. Preheat air fryer to 375
  2. In a glass or measuring cup whisk pancake mix, milk, egg and sugar
  3. Put the flour on a plate, and the Corn Flakes on another
  4. Stick each sausage with a skewer, lightly roll in flour, dip in the batter, the roll and coat well in the crushed Corn Flakes - repeat with remaining sausages
  5. Place on a parchment-lined air fryer tray and coat with non-stick spray
  6. Cook 6–8 minutes, flip halfway, lightly spray again and finish cooking until golden & crisp
  7. While they cook, warm the maple syrup with the mustard, stir to combine and serve on the side
