Since this uses a deli roasted chicken, you can go from nothing to eat in about 6 minutes. And because the chicken is already cooked, your time in the pan is almost nuthin.
Makes about 4 tacos
Ingredients
Dressing
1/2 tablespoon minced ginger
1 clove garlic, minced
2 tablespoons neutral oil
1 tablespoon soy
1 tablespoon rice vinegar
Juice of 1/2 lime
1 teaspoon brown sugar
1 1/2 cups broccoli coleslaw mix
Taco
1 tablespoon neutral oil
1 1/2 cups cooked, deli roasted chicken, shredded
1 teaspoon fresh ginger, minced
1 clove garlic, minced
Pinch Kosher salt
1 tablespoon Chili Paste (Sambal Oelek)
Sour cream
4 tortillas, corn or flour
Directions
In medium bowl mix dressing ingredients (except slaw) well to dissolve sugar, then add slaw and mix to combine - set aside
Heat non-stick pan over medium, and oil and when almost smoking put in the chicken
Cook, stirring often about a minute then add the ginger & garlic, salt and chili paste - cook about a minute
Warm tortillas
Build your taco: sour cream, slaw mix, chicken - eat!
