Baked Beans with Crispy Cheesy Onion Topping

There are casseroles, and then there’s this: smoky, tangy, bacony and crowned with a cheesy crispy onion topping - what's not to like? And it's perfect for potlucks, BBQ sides, or honestly just dinner with a big spoon.

Serves 6-8

Ingredients

  • 1 - 28 ounce can baked beans, whatever you love but I like the maple version for these
  • 1/2 pound bacon, chopped
  • 1/2 onion, diced fine
  • 1 whole red or green bell pepper (or half of each), diced
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons minced chipotle peppers
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1 cup fried onions (like the green bean casserole kind)
  • 1 cup shredded cheese, go with your fav but I used Monterey jack

Directions

  1. Preheat ovento 375, and lightly grease a baking dish, or a STCG cast iron pan
  2. Cook the bacon in a pan until almost getting crispy (there's more flavor with a little fat still in the bacon) then remove and set aside, but leave 2-3 tablespoon of grease in the pan
  3. To the same pan, add the onion and peppers and cook until softened, 3-4 minutes then add the garlic & tomato paste and cook, stirring another minute
  4. Add the brown sugar, Dijon, apple cider vinegar, chipotle peppers, paprika, and salt & pepper, the reserved bacon and the beans
  5. Mix well to combine, then put into your baking dish
  6. Put the fried onions and cheese in a bowl, mix really well then scatter over the beans
  7. Bake uncovered 30–40 min until bubbly and topping is golden and crisp
  8. Let sit 15 minutes before serving - this gives it time to set, keeps the topping from going soggy and keeps you from burning your mouth
