Pickled Onions
- Bring all ingredients to a boil, stirring until sugar & salt are dissolved
- Put onions into a mason jar and pour brine over the top - set aside
Mash
- Peel, then diced potatoes into even pieces, and boil until soft enough to poke a knife into
- Drain well, then mash and add the butter, sour cream, chipotles and salt & pepper - mix well to combine - keep warm
Gravy
- Melt butter in a small pot and add flour, mix to combine
- Whisk in the broth until a smooth, then stir in the salsa and soy sauce - mix, adding a little more broth or water if you want it thinner
Flatbread
- Grill bangers until done, any way you like then slice diagonally
- Grill or griddle flatbread on both sides
- Build*: flatbread, spread on some mash, top with some cheese then melt under a broiler, add the sausages, a good drizzle of the gravy, red onions and finally a little cilantro
* The other option would be to build like this: flatbread, mash, bangers, cheese THEN melt the top, add the onions and cilantro and serve the gravy on the side for dipping. I liked seeing the sausages, but do what works best for you.
