Barbacoa (Pressure Cooker)


  • 3-4 pounds beef cheeks (or chuck roast) trimmed of silver-skin & extra fat (you should leave a little)
  • 1 teaspoon each Kosher salt & ground pepper
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 2 large cloves of garlic, smashed
  • 1 large bay leaf or 2 small
  • Juice of 2 limes
  • 1 small bunch cilantro
  • 1 tablespoon minced chipotle peppers
  • 2 cups beef broth
  • For serving: tortillas, diced white onion, cilantro, lime wedges, tomatillo salsa recipe here


  1. Put everything in a pressure cooker, put on lid and set on high for 50 minutes
  2. When it;s done, let the steam release on it’s own
  3. Remove, chop, serve, go to heaven then come back and have another one
