BBQ Butter Chicken

You know how 'butter makes everything better? Well just wait to you find out what BBQ sauce, butter and a couple other things together can do. NOTE: This is designed for cooking in a pizza oven - but no pizza oven, no problem. Just crank your oven up as far as it'll go, and cook by temperatures.

Ingredients

Chicken

  • 2½ pounds bone-in, skin-on chicken thighs (6 to 8 pieces)
  • Olive oil
  • Kosher salt & course ground black pepper
  • Fresh cracked black pepper

BBQ Butter Glaze

  • 1/2 cup BBQ sauce
  • 4 tablespoons butter
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder

Directions

Chicken

  1. Pat thighs very dry, drizzle lightly with olive oil and season generously with salt and pepper
  2. Bring pizza oven to 650–700, and place cast iron pan in the oven while it heats up
  3.  Carefully pull skillet, lightly oil, place thighs skin-side down and cook 4–5 minutes, then flip for another 6–8 minutes more until an internal temp of 175–185. If the thighs start to brown too quickly, cover with foil
  4. While chicken cooks, combine sauce ingredients in a small pan, then warm gently until melted and glossy - don't boil
  5.  When done, brush the thighs generously with the glaze and return to oven about 2 minutes until sauce bubbles, edges caramelize and the skin gets sticky and lacquered 
  6. Rest 5 minutes, then brush with a little more glaze before serving
