Beer Braised Beef Burrito - Belgium

Inspired by Belgium's classic Carbonnade Flamande, this burrito takes Belgium's famous beer-braised beef stew, and wraps it up with melty Gruyère. But we're shortcutting the braising part by using super thinly sliced beef

Makes one

Ingredients

Burrito

  • 1 large flour tortilla
  • 1/2 cup shredded Gruyère cheese
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon Dijon mustard

Beef

  • 1 tablespoon neutral oil
  • 1 large yellow onion, thinly sliced
  • 12 oz shaved beef or very thinly sliced sirloin, like this
  • 1 cup Belgian-style dubbel, brown ale or dark beer
  • 1/2 cup beef stock
  • 1/4 cup Dijon mustard
  • 1 teaspoon thyme
  • 1 bay leaf
  • 1 slice hearty country bread, crust removed
  • Kosher salt
  • Freshly cracked black pepper

Directions

Beef

  1. Heat the oil in a large skillet over medium-highheat.
  2. Add the onions with a generous pinch of salt and cook, stirring often, until caramelized
  3. Pour in the beer, scraping up any browned bits from the bottom of the pan, then add the beef stock, 1 tablespoon of the Dijon, the thyme and bay leaf
  4. Tear the bread into small pieces and stir it into the sauce - simmer for 5 to 8 minutes, stirring occasionally, until the bread has completely dissolved and the sauce has thickened
  5. Remove the bay leaf
  6. Add the shaved beef, season lightly with salt and pepper, and cook for 2 to 3 minutes, just until the beef is cooked through

Burrito

  1. Warm the tortilla, and spread remaining Dijon down the center, pile on the beer-braised beef and top with the Gruyère
  2. Roll tightly, and toast in a dry skillet over medium heat until golden and the cheese has melted
  3. Slice in half and serve
