Best Pastrami Taco, Ever


  • 1 red onion, thinly sliced
  • 1/2 tablespoon oil
  • 2 1/2 tablespoons butter
  • Kosher salt & fresh ground pepper
  • 2 tablespoons prepared horseradish
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Sour cream
  • 1/3 pound sliced deli pastrami
  • 1/3 cup monterey jack cheese, shredded
  • 4 eggs
  • 4 corn tortillas
  • 1/3 cup French’s Fried Onions


  1. Cook onions in oil and 1 tablespoon butter over medium heat until well softened and golden brown - season with salt & pepper and keep warm
  2. Combine horseradish, Dijon and sour cream - mix well and set aside
  3. Cook pastrami in 4 little piles in a non-stick pan until beginning to brown, flip over and add cheese - allow to melt
  4. Cook eggs over easy with remaining butter in a non-stick pan and keep warm
  5. Warm tortillas and build: tortilla, sauce, onions, pastrami with cheese, egg and finally fried onions
  6. Scarf, I mean eat - no...I mean scarf
