Brat Pot Pie

Brat Pot Pie

Serves 6

Ingredients

  • One pack (approx 20 ounces) uncooked brats
  • Neutral
  • 1 yellow onion, diced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 tablespoon garlic paste
  • 2 handfuls baby spinach, roughly 2 cups
  • Doug's Dust BBQ Seasoning, or any bbq seasoning
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk
  • 1/2 cup Parmesan cheese
  • One box Red Lobster Cheddar Bay Bisquit mix, lus 1/2 cup shredded cheddar and 1/4 cup butter

Directions

  1. Preheat smoker to 350, put on brats about 30 minutes, or until 160 degrees - about 30 minutes (failing that, cook them anyway you like until done)
  2. While they cook, heat a tablespoon of oil in a large oven proof pan over medium high heat, and add the onion and peppers - cook until softened, about 5 minutes
  3. Stir in the garlic, and when fragrant add the spinach and mix until wilted, a teaspoon or so of the bbq seasoning, mix in well and set aside
  4. Melt butter in a small pot and add flour - mix until smooth, then whisk in milk a little at a time until smooth and then the parmesan, set aside
  5. When brats are ready, cut into bites size pieces, and add to the pan with the veggies and the cheese sauce - mix well
  6. Preheat oven to 400
  7. Make biscuits according to package directions using the shredded cheddar, and smooth over the top of the brat mixture
  8. Bake until golden, 18-20 minutes, then remove and mix seasoning pack with 1/2 cup butter and brush over the top
  9. Serve
