Brioche Buns

Never thought you could make your own brioche buns? Well, never did I, but they aren't complicated - and are so delicious.

Makes 8 hamburger buns or 12 slider buns

Ingredients

  • 1 cup warm water, between 100 & 120 degrees
  • ¼ cup warm milk, between 100 & 120 degrees, plus 1 tablespoon for brushing
  • 1 tablespoon instant yeast
  • 2 tablespoons sugar
  • 2 eggs
  • 1 ½ teaspoons salt
  • 3 1/2 cups all purpose flour
  • 2 tablespoons softened butter
  • Sesame seeds, poppy seeds or even everything bagel seasoning for topping

Directions

  1. Put the water, milk, yeast and sugar in the bowl of a mixer, stir to mix and leave until foamy on top, 5 to 10 minutes
  2. Beat one of the eggs and add to the milk/yeast mixture with the salt, mix well to combine
  3. Using the dough hook, start adding the flour a little at a time, and when all incorporated, add the butter - knead until relatively smooth, 7-10 minutes
  4. Remove from the bowl, and put on a lightly floured surface, knead by hand a couple minutes and shape into a large ball
  5. Cut into 8 pieces (or 12 for slider size) shape into round balls and put on a parchment lined baking sheet, cover with a towel and let rise 15 minutes
  6. Preheat oven to 400
  7. Beat the remaining egg and combine with the milk, then brush the tops and sides of the buns, sprinkle with seeds or any topping that works for you and bake 15 minutes, or until beautifully golden brown
