Buttermilk Pancakes

Buttermilk Pancakes

Makes about 12 pancakes

Ingredients

  • 2 cups all-purpose flour 
  • 1/3 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 6 tablespoons butter, melted
  • Optional: 1 teaspoon vanilla extract
  • 8 ounces ground breakfast sausage
  • 8 ounces bacon, chopped small
  • 1 cup shredded cheese, any you like sport
  • 3 eggs
  • Maple syruo for serving

Directions

  1. Put the flour, sugar, baking powder, baking soda, and salt in a large bowl and whisk until combined
  2. In another bowl, whisk the eggs with the buttermilk - and vanilla if using, then whisk in the melted butter
  3. Pour the wet ingredients into the dry ingredients and combine gently with a large spoon - if the batter has a few lumps no prob - refrigerate
  4. Heat a flattop over medium, and cook the sausage and bacon separately until done - set aside
  5. Using the butter, grease about an 8" x 15" rectangle on a flattop really well, then place 3 glass or ceramic mugs on a flattop, about 3 inches apart
  6. Pour the batter in and around the glasses over the butter rectangle, then scatter the cheese, crumbled sausage and bacon over the batter
  7. Remove the glasses, and crack an egg into each hole, let the egg start to set
  8. When you start seeing small holes appear on the top of the pancake, separate the rectangle into 3 sections, and carefullt flip each over
  9. Let the bottom set, then roll up each section and plate
  10. Top with syrup to serve
