Carne Asada w/Passionfruit

I can hear the screaming already about the passionfruit. And look, I always say most of my recipes are a 'guide', and you can change them to suit you (see note). But the passionfruit, while definitely sounding weird, is a a most delicious addition. So I say go for it.

NOTE: While I don't mind you messing with most of my recipes - certain ones should be made exactly as written. For example, my Cap'n Crunch Tuna, while also sounding bizzare, wouldn't be the same if for example, you change the cereal to something less weird sounding. So don't.

Ingredients

Marinade

  • 3 large cloves garlic
  • 4 passionfruit
  • 1 bunch cilantro (no stems) finely chopped
  • 1 tablespoon cumin
  • 2 teaspoon brown sugar
  • 1 teaspoon each Kosher salt and freshly ground pepper
  • 1/2 cup neutral oil
  • Zest & juice of one lime
  • 2 tablespoons soy sauce

Carne

Directions

  1. Put garlic in a blender, pulse a couple times to mince then cut passionfruit in half, scoop out the pulp & seeds and add to the blender along with the remaining ingredients (except the steak), blend until mostly smooth
  2. Put steak and 3/4 of the marinade into a large zippered bag, seal and squish around to make sure steak is well covered - refrigerate 1 to 4 hours
  3. When ready to eat, heat grill to high, then clean and oil the grates
  4. Cook steak approximately 3-5 minutes aside, depending on thickness or as necessary until approx 128-130 degrees
  5. Remove from grill, cover with foil and let rest about 10 minutes before cutting across the grain
  6. Make a bowl with some rice, add the sliced carne and garnish with salsa & cilantro
