Carrot Ginger Dressing


    Carrot Ginger Dressing
  • 1/2 pound carrots, peeled
  • 1 cup neutral oil, like avocado oil
  • 1/4 cup chopped fresh ginger
  • 1/2 cup rice vinegar
  • 1/4 cup shallots, rough chopped
  • 1/4 cup soy sauce
  • 1 tablespoon sugar
  • 3 tablespoons sesame oil
  • 2 tablespoons lemon juice
  • Salt and fresh ground pepper to taste


  1. Blanch carrots in boiling water for a minute, remove and immediately put in ice water for 3 minutes - drained & cut into 1/2 inch pieces
  2. Put everything, including carrots into a blender, and mix on medium/high until it becomes a relatively smooth dressing
  3. Store in fridge – but shake well before using
