Charred Tomato & Peach Salsa

Charred Tomato & Peach Salsa

Sweet, smoky, juicy—and just spicy enough. Goes perfect with fish, scoop it with chips or throw it on Brown Butter BBQ Chicken tacos and call it a day. A big effing gloriously delicious day.

Makes about 3 cups

Ingredients

  • 2 ripe peaches, pitted and quartered
  • 3 Roma tomatoes, halved
  • ½ red onion, cut into thick wedges
  • 1 jalapeño, halved and seeded
  • 1 tablespoon olive oil
  • 1 -2 tablespoons minced chipotle peppers (in adobo sauce)
  • Juice of 1 lime
  • ¼ cup chopped fresh cilantro
  • Kosher salt & coarse ground black pepper

Directions

  1. Heat grill or grill pan to medium high
  2. Drizzle peaches, tomatoes, onion and jalapeno with oil, toss gently then put everything cut-side down on the grill and cook
  3. Grill until beautifully charred all around - remove and let cool
  4. Chop everything into a small, chunky dice and put into a bowl with the chipotle, lime & cilantro - mix well then season to taste with salt & pepper
