Cheddar Broccoli Rice Bowls

Ingredients

Rice Bowls

  • 1 tablespoon neutral oil
  • 1 ½ cups basmati rice
  • 3 cups chicken broth
  • 3 cups broccoli florets
  • 2 tablespoons butter
  • 1 clove garlic, minced
  • 2 tablespoons flour
  • 2 cups milk
  • 1 ½ cups Borden Mild Cheddar Cheese, shredded
  • Kosher salt & coarse ground black pepper

Rice Bowls

  1. Heat a pot over medium add the oil, and when warm put in the rice and stir a couple minutes to toast lightly
  2. Add the broth, bring to a boil then turn down to a simmer and cover. Start checking at about 12 minutes, and when all the liquid is evaporated, kill the heat and leave it covered for another 5
  3. While the rice cooks, put broccoli in bowl, add a couple tablespoons of water, cover with cling film and microwave 2 minutes or until tender - set aside
  4. Melt butter in a small pot, add the garlic and when fragrant whisk in the flour and cook 1 minute. Then slowly whisk in the milk - stir until thickened, about 2 minutes
  5. Add the cheese, stirring until melted and gorgeous, season to taste with salt and pepper, gently stir in the broccoli - cover and keep warm while you make the strips
  6. Plate some rice, top with the broccoli cheese gorgeousness and serve with flatbread strips

Flatbread Strips

  1. Preheat oven to 425
  2. Mix butter with garlic, brush on top of the tortillas, sprinkle with cheese and cut into strips
  3. Bake about 7 minutes, or until golden and crisp
