Cheeseball Mac

Yes, you read that correctly - we're making mac & cheese from a shit ton of cheeseballs. This came from something we saw online and as much as I wanted to hate it, I couldn't. I should have known though, because it's kind of like those pretty damn good mashed potatoes we made from potato chips.

Makes a lot, and I mean a lot. Like maybe enough for 20

Ingredients

  • 23 ounces cheeseballs
  • 1/2 gallon milk
  • 32 ounces cheese, any will work but I went with pepperjack
  • 1 stick butter
  • 3 pounds pasta
  • 1/2 pound bacon - cooked, crispy and crumbled

Directions

  1. Put everything except pasta & bacon in a large pot over medium heat
  2. As the milk warms the cheese will start to melt and the cheeseballs will begin to break down - as this happens start stirring
  3. Continue until you've created a smooth, creamy cheese sauce
  4. Cook pasta, mix with cheese sauce and top with bacon
  5. Happy eating
