Cheeseburger Soup

Quick, easy, delicious and maybe the best part...is it's Carnivore diet friendly! Warning: the recipe calls for soy or Worcestershire & garlic powder that technically aren't allowed on a carnivore diet. But cmon, a guy's gotta have a little fun, right?

Serves 3-4

Ingredients

  • 1 pound ground beef
  • 1 tablespoon oil, or for carnivore use butter, bacon grease or even tallow
  • 1 cup beef broth
  • 4 ounces cream cheese, cubed
  • 1 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese, plus extra for serving
  • 1 tablespoon worcestershire or soy
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 4 pieces bacon, cooked, crispy & crumbled for serving

Directions

  1. Heat oil or whatever you're using in a large pot, add the beef and cook until fully browned - remove excess grease
  2. Pour in the bone broth, bring to a simmer and add cream cheese - stir until melted and fully incorporated
  3. Add in the heavy cream, shredded cheddar, Worstershire or soy and garlic powder
  4. Cook on low and stir gently until the cheese is melted and soup is thickened - season to taste with salt & pepper
  5. Simmer 5–10 minutes until velvety and thick
  6. Ladle into bowls and top with extra cheese, crumbled bacon
