Cheesy Shrimp Tacos

Shrimp & cheese? Oh hell yes! Makes about 5


  • 1/4 cup mayo
  • 1 clove garlic, minced
  • Juice from 1/2 lime
  • Kosher salt & pepper
  • 1/2 pound peeled, uncooked shrimp, (31/50’s are perfect) cut into smallish pieces
  • Oil
  • 1/3 cup shredded Monterey jack cheese
  • corn tortillas


  1. Combine, mayo, garlic, lime juice and a pinch of salt & pepper - mix well and set aside
  2. Heat a pan or flattop to medium high, and add tortillas, heat them about a minute, then flip over add some sauce and cheese to each
  3. Add more oil to the flattop and put on shrimp – they wont take long
  4. Keep them moving so they cook evenly, and when pretty & pink, put some on each tortilla, fold in half and cook another minute or so on each side
  5. Boom
