Chicken Burrito - Morocco

Warm spices, couscous, harissa and chicken come together in one of my new favorite burritos.

Makes one

Ingredients

  • 1 large flour tortilla
  • 1 large boneless, skinless chicken thigh
  • Olive oil
  • 1/2 teaspoon each cumin, coriander, smoked paprika and kosher salt
  • 1/2 cup cooked couscous
  • 1/4 cup chickpeas
  • 1/4 cup diced cucumber
  • 1/4 cup diced tomato
  • 2 tablespoons non-fat greek yogurt
  • 2 tablespoons harissa
  • Chopped cilantro or parsley

Directions

  1. Heat grill to medium high
  2. Combine the cumin, coriander, smoked paprika and kosher salt
  3. Lightly oil the chicken, season both sides well with the seasoning, then grill until beautifully charred and about 180
  4. Mash the chick peas, and stirred into the cous cous with 1 tablespoon oil
  5. Warm tortilla and build: spread the harissa yogurt down the middle, add couscous, chicken, cucumber and tomato
  6. Roll tightly, cut in half and go for it
