Chili Crisp Alfredo

Chili Crisp Alfredo

Serves 3-4

Ingredients

  • 12 ounces fettuccine

  • 3 tablespoons butter

  • 3 cloves garlic, finely chopped

  • 1 cup heavy cream

  • 1 cup finely grated parmesan cheese

  • 2 tablespoons chili crisp, plus extra for finishing

  • Kosher salt and coarse ground black pepper

  • 1/4 cup chopped parsley

Directions

  1. Cook the pasta in salted water until al dente. Reserve 1 cup pasta water before draining.
  2. Meanwhile melt the butter in a large skillet over medium heat. Add the garlic and cook 30 seconds until fragrant.
  3. Add the cream and bring to a gentle simmer. Stir in the parmesan and whisk until smooth. Add the chili crisp and a few grinds of black pepper.
  4. Add the pasta and toss until coated, loosening with pasta water as needed as until glossy and silky.
  5. Finish with parsley, extra parmesan and another spoonful of chili crisp over the top
