Coffee and Brown Sugar Ribeye

Coffee and Brown Sugar Ribeye

Serves 2

Ingredients

Steak

  • 1 ribeye steak, about 14 ounces and 1 to 1 1/4 inches thick

  • 1 tablespoon finely ground coffee

  • 1 tablespoon brown sugar

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon ancho chili powder

  • 1 teaspoon kosher salt
1/2 teaspoon black pepper

Sweet Potato Coins

  • 1 large Japanese sweet potato
  • 1 tablespoon olive oil

  • Kosher salt
& course ground black pepper

Directions

Steak

  1. Mix the coffee, brown sugar, paprika, chili powder, salt and pepper and rub all over the steak - let sit at room temperature 20 minutes
  2. Slice the potatoes into 1/4 inch thick coins, then toss with olive oil, salt and pepper
  3. Preheat air fryer to 400 degrees, and cook the potatoes in a single layer for 12 minutes, flipping once, until crisp and browned - remove and keep warm
  4. Place the steak in the air fryer, and cook about 10 minutes total, flipping halfway, depending on thickness and desired doneness - shoot for about 130 degrees internal for medium-rare
  5. Slice the steak and plate with the sweet potato coins
