Corn, Bacon & Jalapeño Fritters

Think of these as summer in crispy, golden bite form — sweet corn, smoky bacon, and a little jalapeño heat all bound together and fried until they’re impossible to stop eating. They’re the perfect side for grilled anything, a killer brunch snack, or just something to eat over the sink while pretending you’ll share.

Ingredients

Fritters

  • 1/4 pound bacon, finely chopped
  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/3 cup finely chopped green onion
  • 1 cup diced pickled jalapenos
  • 15 ounces creamed corn

Serving

  • 1/3 cup non-fat Greek yogurt or sour cream
  • Zest and juice of 1/2 lime
  • Oil for frying

Directions

  1. Put all the fritter ingredients in a large bowl and mix really well to combine - refrigerate 15 minutes
  2. Combine sour cream, lime zest & juice - mix well and refrigerate
  3. Heat oil to 350
  4. Use a tablespoon or small cookie scoop to carefully drop spoonful’s of the batter into the oil
  5. fry in small batches 3 to 4 minutes or until golden brown, turning to make sure they cook evenly
  6. Remove to paper towels, and let drain a minute or two - serve with the sour cream
