Crab Manicotti
makes about 12 - Crab, cheese & spinach - all crabby, warm and bubbly. Could it get any better?
Ingredients
12 Manicotti Shells
16 ounces crab meat, lump if possible
One 10oz box frozen chopped spinach, defrosted and moisture squeezed out
8 ounces Ricotta Cheese
1 egg yolk
3/4 cup Parmesan cheese, shredded or grated
Salt & pepper to taste
1 cup pasta sauce, tomato sauce, red pepper sauce - just something red and good
1 cup whipping cream
Directions
Preheat oven to 350
Boil shells according to package directions
Put crab, spinach, ricotta, egg, 1/2 cup of the parmesan in a large bowl
Mix well and season to taste with salt and pepper
Drain shells and rinse with cool water
Pour red sauce into the bottom of a 9x13 pan
Stuff shells with crab mixture and set on top of sauce
Top shells with whipping cream and remaining Parmesan cheese
Bake 20-30 minutes, or until brown and bubbly
