Crack Burger 2.0

Sometime back, we made the viral 'Crack Burger' - the crack part is that there's sour cream, bacon, ranch seasoning and cheese in the patty. And as good as it was, we felt like it was time to create our own. And with bacon jam, 'dirty mayo' and garlic cheese bread for the bun - this one is insane.

Makes 2

Ingredients

Bacon Jam

  • 4 slices bacon, chopped
  • 2 tablespoons chopped red onion
  • 1 tablespoon brown sugar
  • 1 teaspoon white miso paste
  • 1 teaspoon apple cider vinegar

For the Dirty Mayo

  • ¼ cup mayo
  • 2 teaspoons sriracha
  • 2 teaspoons Dijon
  • 1-2 teaspoons pickle brine/juice

Toast

  • 1/4 cup butter
  • 1 large clove garlic, minced
  • 2 tablespoons grated Parmesan cheese
  • 4 slices thick cut brioche or Texas toast
  • 1 cup shredded fontina cheese, or anything that melts well
  • 4 slices American cheese
  • 2 slices pepper jack cheese
  • 4 - 4 ounce balls ground beef
  • Kosher salt & black pepper
  • Kettle chips
  • Pickled jalapenos

Directions

Bacon Jam

  1. Cook bacon in a skillet over medium heat until about 75% done (still a little soft)
  2. Add onion and cook 1–2 mins until softened
  3. Stir in the miso, brown sugar and vinegar - let simmer a couple minutes then set aside

Dirty Mayo

  1. Mix all ingredients in a small bowl

Toast

  1. In a small bowl, mix butter, grated garlic and Parmesan, set aside
  2. Top 2 slices of the bread with the fontina, pepper jack, 1 slice of American, then other slice of bread
  3. Heat a nonstick pan, spread parm butter on the top of both sandwiches, and cook like a grilled cheese until golden brown, butter the tops, flip over and repeat
  4. Once done, gently pull apart each sandwich - these are now your top and bottom buns
  5. Heat cast iron pan or flattop over high, add some oil and smash them on the hot surface - season top with salt & pepper
  6. After 1–2 minutes, flip and top each with a slice of American cheese and cook until the cheese melts and patties are crispy on both sides - remove
  7. Spread dirty mayo on 2 of the toast 'buns', bacon jam, a patty with cheese, crumbled chips, another patty, more jam, more chips, jalapenos and finally the top bun
