Crack Sandwich

Jalapeño popper meets chicken sandwich meets grilled cheese. With bacon onion jam. Make, eat, repeat. Holy shit, we could NOT stop eating this.

Makes 4 sandwiches

Ingredients

  • Bacon Onion Jam, recipe here - you won't use it all, but make it all cuz it's amazeballs on everything
  • 2 boneless, skinless chicken thighs
  • 3 jalapeños, halved with seeds removed
  • Oil
  • Kosher salt & coarse ground black pepper
  • 4 ounces softened cream cheese
  • 1/3 cup shredded smoked gouda
  • 1/3 cup shredded sharp cheddar
  • 8 slices pepper jack cheese
  • 8 slices bread, something good & hearty
  • Mayo, for grilling

Directions

  1. Heat grill to medium high
  2. Lightly oil chicken & jalapenos, season with salt & pepper
  3. Cook chicken until nicely charred and approximately 175, and the jalapenos until charred and and blistered– remove and let cool a bit
  4. Chop up chicken and jalapenos fairly fine, then put into a bowl
  5.  Add the cream cheese, gouda and cheddar - mix well
  6. Build for each sandwich: bacon jam on one slice of bread, slice of pepper jack, chicken mixture, another slice of pepper jack, 2nd slice of bread
  7. Spread mayo on the top, then griddle mayo side down over medium heat until golden brown
  8. Add mayo to the top, then flip over and repeat
