Creamed Swiss Chard

Creamed Swiss Chard

Serves 4

Ingredients

  • 1/2 red onion, chopped
  • 1 garlic clove, crushed
  • 2 bunches of Swiss Chard, red stalks removed
  • 2 teaspoons olive oil
  • 2 tablespoons butter
  • 3 tablespoons All Purpose Flour
  • 3/4 cup 2% milk
  • 1 tablespoon Parmesan cheese
  • pinch Kosher salt
  • fresh black pepper

Directions

  1. Boil water in large pot
  2. In medium pan, add oil and butter, cook onions, garlic 3-4 minutes
  3. Stir in flour, whisk in milk, keep moving cook 2 minutes
  4. Roll up all chard leaves, diced small
  5. Cook in boiling water for 2 minutes, drain, press excess water out, dice again
  6. Add chard, Parmesan, season Kosher salt and pepper to sauce, stir well and serve (perfect with a good steak).
