Creamy Kewpie Nori Pasta

Creamy Kewpie Nori Pasta

Servess 2 - 3

Ingredients

  • 8 ounces spaghetti or linguine
  • 2 tablespoons butter
  • 3 cloves garlic, finely minced
  • 1 tablespoon soy sauce
  • 1 teaspoon white miso paste (optional, but great)
  • 1 tablespoon chili crisp
  • 1/3 cup Kewpie mayonnaise
  • 1/4 cup grated Parmesan
  • 1 egg yolk
  • 2 tablespoons furikake and/or
  • 2 tablespoons shredded nori
  • 2 green onions, thinly sliced

Directions

  1. Mix 1/3 kewpie with parm and egg yolk, set aside
  2. Cook the pasta in well salted water until just al dente. Reserve at least 1 cup of pasta water before draining 
  3. While the pasta cooks, melt butter in a large pan over medium heat, add the garlic and cook about 30 seconds until fragrant, not browned
  4. Then add the soy, miso and chili crisp - stir well tocombine
  5. Turn the heat low, and add the drained pasta to the pan - toss well
  6. Take the pan off the heat, and stir in the Kewpie mixture, add splashes of the reserved pasta water until glossy and silky. You want it loose enough to coat the noodles, not thick and sticky
  7. Pile into bowls and finish with furikake, shredded nori and green onions
