Crispy Cheese & Steak Torta

This might just be the greatest steak sandwich you've never had. It's a crispy cheese steak torta loaded with grilled marinated skirt steak, melty cheese, creamy jalapeño mayo, whole beans (I love refried, but this is fresher), lettuce, tomato, onion, and cilantro, all stuffed into a toasted torta roll. The inspiration comes from Los Palomos in Riverside, California. And all I can say is daaaaaamn.

Ingredients

Beef

  • 1 pound skirt steak
  • 3 tablespoons soy sauce
  • 2 tablespoons neutral oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon black pepper
  • 1 teaspoon brown sugar or honey

Torta

  • 3 cups Monterey Jack cheese
  • 1/2 cup diced yellow onion
  • 1/3 cup chopped cilantro
  • Neutral oil
  • 1 cup beans, black or pinto - I wouldn't go refried here. I love refried beans, but this tastes fresher without them
  • 1/4 teaspoon cumin
  • 1 cup lettuce
  • 3/4 cup diced tomato
  • 1/3 - 1/2 cup mayo
  • 1 - 2 tablespoons pickled jalapeno juice
  • 2 torta rolls, toasted lightly

Directions

Beef

  1. Combine all beef ingredients, except steak - mix well to combine
  2. Put in a zippered bag and add the steak, make sure it's well cover and close - marinate up tp 2 hours
  3. Heat an oiled grill to medium high, shake off excess marinade from steak and cook, a few minutes on each side or until done to your likeness, which hopefully is medium rare, or approx 130 degrees
  4. Remove, cover loosely with foil for 10 minutes, then chop into smallish bite-sized pieces - set aside

Torta

  1. Heat a small pan or pot, add a tiny squeeze of oil, the beans and the cumin, mix until warmed through
  2. Combine the mayo with the jalapeno juice - mix and set aside
  3. Heat a flat top or large cast iron pan to medium, and spread out half the cheese into about a 9x7 inch rectangle
  4. Scatter with half the onions and cilantro, half the beans and half the chopped steak
  5. When the bottom is golden brown and crisping, use a spatula to roll up everything in the cheese
  6. Build: the toasted torta, some of the mayo, lettuce, tomato (season with salt & pepper) the rolled up cheese business and the top bun with a little more mayo
  7. Eat!
