Deep Fried Dogs

Rutt's Hut in Clifton NJ is famous for their 'Ripper' dog, which are deep fried until they 'rip' or split a little. And for good reason...they are insanely delicious. So here are 3 different ones to try using a fried dog. And if you're only going to make one...I'd make the New York, cuz daaaaaaamn!

Ingredients

BACON CHEESE WITH CRISPY ONIONS

Bacon Cheese Sauce

  • 1/2 pound bacon, diced
  • 1/2 cup milk
  • 1/2 pound Velveeta cheese, cut into 2 inch chunks
  • 1/4 teaspoon garlic powder
  • Pinch salt & pepper

Crispy Onions

  • 1 yellow onion, thinly sliced
  • 1 cup milk or buttermilk
  • 2 cups flour
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Oil for frying

NEW YORK STYLE

Dirty Water Onions

  • 1 tablespoon neutral oil
  • 1 small yellow onion, thinly sliced
  • 1 tablespoon ketchup
  • 1/4 cup water
  • Pinch salt & pepper
  • 1 tablespoon sriracha

Sriracha Mustard

  • 3 tablespoons yellow mustard
  • 1 tablespoon sriracha

REUBEN

Russian Dressing

  • 1/4 cup mayo
  • 1 tablespoon chili sauce (the Western version)
  • 1 teaspoon prepared horseradish
  • 1 teaspoon sriracha
  • 1/2 teaspoon Worcestershire
  • Pinch salt & pepper
  • Deli pastrami, about 2 ounces per dog
  • Swiss cheese, 1 slice per dog
  • Sauerkraut, 2 tablespoons per dog
  • Dill pickles, diced small

Dogs

  • Any kind really, but I used an 'all beef with a natural casing' and if you can find them...I think they make the best ones
  • Buns, your choice - tho I'm partial to brioche and toasted please

Directions

BACON CHEESE WITH CRISPY ONIONS

Bacon Cheese Sauce

  1. Cook bacon in a small pot until getting crispy, remove to a paper towel to drain and remove grease
  2. Add milk to the pot over medium heat, and when warm start adding the cheese a few blocks at a time - stir as you add, and when melted add more
  3. When all the cheese is melted, and the remaining ingredients, stir well to incorporate then stir in the bacon, set aside

Crispy Onions

  1. Soak onions in milk a few minutes
  2. While they soak, combine flour and seasonings in a bowl
  3. Heat oil to 350 degrees
  4. Drain oil from milk shaking off excess, then dredge in the flour coating well
  5. Shake off excess, then carefully cook in the oil until just golden brown, about 2 minutes - remove to paper towels to dry

Build

  1. When ready, cook dogs in the heated oil 60-90 seconds until they begin to blister
  2. Top bun with a dog, add the bacon cheese and top with crispy onions

NEW YORK STYLE

Dirty Water Onions

  1. Heat oil over medium in a small pot and add the onions
  2. Cook about 5 minutes until softened, don't brown
  3. Stir in remaining ingredients, and let simmer on low a couple minutes, set aside

Sriracha Mustard

  1. Put ketchup and mustard in a bowl and mix to combine

Build

  1. When ready, cook dogs in the heated oil 60-90 seconds until they begin to blister
  2. Top a bun with a fried dog, the dirty water onions and finally some mustard

  1. Put all ingredients in a small bowl and mix well, set aside

  1. When ready, cook dogs in the heated oil 60-90 seconds until they begin to blister
  2. While they do, add a pile of pastrami to a flat griddle or non-stick pan and cook until just beginning to get crispy (about a minute) then flip and add the cheese to melt
  3. Spread some dressing on a bun, add the sauerkraut, a fried dog then the pastrami & cheese and finally some diced pickles
