Dumplings with a Skirt

Frozen potstickers/dumplings/wontons - whatever you call them are genius because they go from nothing to delicious in minutes. But just by adding a little flour to the water when it's time to steam them makes them sooooo damn pretty and extra crispy. Do it!

Makes 12

Ingredients

  • 12 frozen potstickers, any kind you like will work
  • Neutral oil
  • 1 tablespoon flour
  • 1/3 cup water
  • 3 tablespoons chili crisp
  • 1 tablespoon soy sauce
  • 1 teaspoon black vinegar, or sub sith balsamic, rice vinegar or apple cider vinegar

Directions

  1. Heat a large non stick pan over medium/high, add a couple tablespoons of oil and the potstickers
  2. Over the next 5-6 minutes you want to brown them - whether all sides, or just the flat bottoms is up to you
  3. Combine the flour and water well in a squeeze bottle or measuring cup with a spout - shake or mix well to mix
  4. Arrange potstickers in a circular design in the pan, and drizzle the mixture evenly in and around, cover with a lid and turn down to medium - leave 5 to 6 minutes
  5. While they cook combine the chili crisp, soy & vinegar in a small bowl, mix well and set aside
  6. Remove the lid, and you're looking for the liquid between the potstickers to have mostly evaporated and turned to a light golden brown lace - if not, leave the lid off for another couple minutes
  7. When ready, put a plate over the top, and carefully flip over so the dumplings are now lace facing up on the plate
  8. Serve with the dipping sauce
