Norway's beloved lamb, cabbage and potato stew gets the completely unnecessary burrito treatment

Makes one

Ingredients

  • 1 large flour tortilla
  • 3 lamb loin chops
  • Kosher salt & coarse ground black pepper
  • Olive oil
  • Grainy mustard
  • 2 tablespoons butter
  • 1 1/2 cups thinly sliced green cabbage
  • 1 cup chicken broth
  • 1/2 Yukon gold potato, cut into wedges and cooked until sift enough to mash
  • 1/4 cup chicken gravy
  • 2 tablespoons sour cream

Directions

  1. Heat grill to medium high
  2. Season lamb with salt & pepper, and brush with mustard - cook until nicely charred and about 140-145 degrees
  3. While it cooks, melt butter in a pot, add cabbage and cook until beginning to wilt, 3-4 minutes. Add about 1/2 cup of the broth, 1/2 tablespoon of pepper and simmer until mostly evaporated - set aside
  4. Build: warm the tortill and spread with the sour cream, mash potato on top, then put on the cabbage, the lamb and finally drizzle with the gravy
  5. Roll up, slice and eat away
