Filipino Longganisa Breakfast Burrito
Sweet, garlicky longganisa, fluffy garlic rice, a crispy hash brown, scrambled eggs and a soft tortilla. this burrito takes the best of a classic Filipino breakfast and wraps it up in one handheld package.
Combine sour cream, sriracha and vinegar in a small bowl - mix well and set aside
Cook longganisa in a pan until cooked through - 4-5 minutes then remove
Heat oil in a large pan over medium heat, add garlic and cook until golden brown and fragrant - but watch closely cuz it can burn fast
Wipe out pan and add the rice, breaking up clumps with your spatula and stir-fry until heated through and coated with garlicky oil, season with salt and pepper
Warm tortillas and build: some of the vinegar crema, layer of rice, eggs, longganisa, hash brown and onions
Roll up tightly into a burrito, griddle seam side down for a minute to crisp
