Filipino Longganisa Breakfast Burrito

Filipino Longganisa Breakfast Burrito

Sweet, garlicky longganisa, fluffy garlic rice, a crispy hash brown, scrambled eggs and a soft tortilla. this burrito takes the best of a classic Filipino breakfast and wraps it up in one handheld package.

Ingredients

  • 1/4 cup sour cream
  • 1 tablespoon sriracha
  • 1 tablespoons white vinegar
  • 3/4 pound longganisa, Filipino sausage removed from casing
  • 1.5 tablespoons neutral oil
  • 6 cloves garlic, finely chopped
  • 2 cups day old rice
  • 2 large eggs, scrambled
  • 2 hash browns, cooked
  • 2 large flour tortillas
  • 1/3 cup pickled red onions, recipe here

Directions

  1. Combine sour cream, sriracha and vinegar in a small bowl - mix well and set aside
  2. Cook longganisa in a pan until cooked through - 4-5 minutes then remove
  3. Heat oil in a large pan over medium heat, add garlic and cook until golden brown and fragrant - but watch closely cuz it can burn fast
  4. Wipe out pan and add the rice, breaking up clumps with your spatula and stir-fry until heated through and coated with garlicky oil, season with salt and pepper
  5. Warm tortillas and build: some of the vinegar crema, layer of rice, eggs, longganisa, hash brown and onions
  6. Roll up tightly into a burrito, griddle seam side down for a minute to crisp
  7. Serve hot
