Five Spice Grilled Pig Wings

Ingredients

Rub

  • 1 tablespoon Chinese five spice powder
  • 2 teaspoons kosher salt
  • 2 teaspoons brown sugar
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon smoked paprika

Pork

  • 3 to 4 pounds pig wings
  • Neutral oil for coating
  • Optional finish: sliced scallions, toasted sesame seeds, light drizzle chili oil

Glaze

  • 1/2 cup hoisin sauce
  • Zest of 1 orange
  • 1/4 cup fresh orange juice
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 small clove garlic, grated

Directions

Rub

  1. Combine all ingredients, mix well

Pork

  1. Pat the pig wings dry, and lightly coat with oil
  2. Generously apply the rub, pressing it in and lt sit 30 minutes at room temperature
  3. Set up grill for 2 zone cooking, about 325 to 350 degrees, and place wings on direct side 3-5 minutes to get good marks, then flip and repeat
  4. Move to indirect side, and close lid - cook 30 to 40 minutes, flipping every 10 to 15 minutes until approximately 185 degrees
  5. While they cook, combine all glaze ingredients in a small saucepan, and simmer 5 to 7 minutes until slightly thickened. It should coat a spoon but still brush easily.
  6. When the pork reaches about 185 degrees, move to direct heat and brush with glaze - grill 2 to 3 minutes per side,then brush again
  7. Pull at 195 to 203 degrees internal, when a probe slides in easily
  8. Rest 10 minutes loosely tented
