Four 10 Minute Recipes

Boy oh boy, do we have your back. Four simple and delicious recipes...and not just in 10 minutes or less, but they all happen in just one pan. Who loves ya baby??

Ingredients

Garlic Shrimp

  • Olive oil
  • 2 cloves minced garlic
  • 1 pound shrimp, peeled and deveined
  • 15 ounce can white beans, drained and rinsed
  • 1/4 - 1/2 teaspoon red pepper flakes
  • Juice of 1 lemon
  • 2 handfuls baby spinach, about 2 cups
  • Salt and black pepper to taste
  • Crusty bread for serving

Cheesy Taco Skillet

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup salsa verde
  • 1/2 cup canned black beans, drained
  • 1/2 cup frozen corn, the fire roasted version would be ideal
  • 1 cup crushed tortilla chips, into pieces not dust
  • 1 cup shredded cheese
  • Optional toppings: sour cream, avocado, green onions

Pesto Gnocchi

  • Olive oil
  • 1 package potato gnocchi
  • 1 cup frozen peas
  • 1 cup chicken broth
  • 1/3 cup prepared pesto
  • 2 tablespoons cream cheese
  • Salt and pepper to taste
  • Shredded parmesan for serving

Thai Basil Chicken

  • 1 tablespoon neutral oil
  • 1 pound ground pork
  • 1 red Holland chili, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons dark soy, or light (regular) is you don't have
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1 cup fresh basil leaves
  • Juice of 1 lime
  • Rice or butter lettuce for serving - or both

Directions

Garlic Shrimp

  1. Heat olive oil in a large skillet over medium heat
  2. Add garlic and cook for 30 seconds, or until fragrant
  3. Stir in shrimp, white beans and red pepper flakes
  4. Cook a couple minutes, stirring occasionally until shrimp turn pink
  5. Add spinach and lemon juice, and continue stirring until spinach is wilted
  6. Season with salt & pepper and drizzle with extra virgin olive oil
  7. Serve warm with crusty bread

Cheesy Taco Skillet

  1. Add oil to a large skillet over medium-high heat, brown the ground beef
  2. Drain excess fat, then stir in taco seasoning and 1/4 cup water - mix well
  3. Add salsa, black beans, and corn - mix well and cook for 2-3 minutes
  4. Scatter the tortilla chips over and top with shredded cheese, cover for 1-2 minutes until the cheese melts
  5. Optionally top with sour cream, avocado, and green onions or cilantro

Pesto Gnocchi 

  1. Heat a couple tablespoons of olive oil in a large skillet over medium heat
  2. Add gnocchi, and stir gently a couple minutes - add a bit more oil if sticking
  3. Add the peas, then stir in 1/3 cup of the broth, and cover 3 minutes or until gnocchi is tender
  4. Put in pesto and cream cheese, stirring until everything is coated adding more broth to loosen
  5. Season to taste with salt and pepper and top with Parmesan
  6. Serve

Thai Basil Chicken

  1. Heat oil in a large skillet over medium-high heat and add chili - cook about a minute
  2. Add pork and cook, breaking it up until browned then stir in garlic - cook 30 seconds or until fragrant
  3. Add soy, fish sauce and sugar - cook 1-2 more minutes
  4. Add basil and stir until wilted, then mix in lime juice
  5. Serve over rice, or in lettuce cups
