Fried Chicken & Waffles Tacos

Fried Chicken & Waffles Tacos

Makes 6 tacos

Ingredients

  • 1 cup buttermilk
  • 1/3 cup pickle juice
  • 2 tablespoons hot sauce
  • 8 chicken tenders
  • 1.5 cups all purpose flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1 teaspoon onion powder, garlic powder and smoked paprika
  • Oil for frying
  • 8 frozen waffles, toasted until still pliable
  • 1 cup shredded cabbage
  • 1/4 cup thinly sliced green onions
  • 1 tablespoon rice vinegar
  • 1 tablespoon mayonnaise
  • 1 teaspoon sugar
  • Kosher salt and coarse ground black pepper

Maple Chili Butter

  • 4 tablespoons butter
  • 2 tablespoons maple syrup
  • 1 tablespoon hot sauce
  • 1 teaspoon chili crisp or red pepper flakes

Directions

  1. Put buttermilk, pickle juice and hot sauce in a large bowl, mix well and add chicken, submerge and let sit an hour up to overnight
  2. When ready, heat oil to 365
  3. Put flour, salt, pepper and seasonings in a bowl and mix well
  4. Drizzle about 1/4 cup buttermilk randomly over the flour in the bowl
  5. Remove chicken from buttermilk, shake off excess and and dredge in the flour, pressing to make sure it sticks - put on a sheet pan
  6. Fry chicken about 3-ish minutes a side, or until 160 degrees, remove to a rack on a sheet pan, and season with kosher salt
  7. In a bowl, toss the cabbage with the green onions, rice vinegar, mayonnaise, sugar and a pinch of salt and pepper.
  8. Fold each waffle slightly like a taco shell and fill with sliced fried chicken and slaw. Drizzle generously with the maple chili butter.
  9. Serve immediately while everything is still hot, crispy and slightly ridiculou

Maple Chili Butter

  1. In a small saucepan melt the butter, then stir in the maple syrup, hot sauce and chili crisp. Keep warm.
