Greek One Pan Chicken Sausage

Greek One Pan Chicken Sausage

This is one of those, simple...'just throw everything together and bang it in the oven and it works' recipes.

Serves 6

Ingredients

Marinade

  • 1/3 cup extra virgin olive oil, plus more for serving
  • Juice of 1 lemon
  • 4 cloves garlic - chopped
  • 2 teaspoons smoked paprika
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon red pepper flakes
  • 2 teaspoons kosher salt
  • 1 teaspoon coarse ground black pepper

Chicken & Sausage

  • 6 bone in chicken thighs or chicken legs, uncooked
  • 6 uncooked sausages, any kind your stomach desires - chicken, Italian, lamb
  • 1 pound whole small red potatoes, cut in half
  • 1 large onion, sliced - red, white, yellow you pick
  • 2 peppers, green, red, yellow, pasilla you pick
  • 2 tablespoons chopped parsley

Directions

  1. Combine all marinade ingredients in a small bowl - mix well to combine
  2. Preheat oven to 400 degrees
  3. Put chicken, sausage and vegetables (not the parsley) into a large bowl and add marinade - mix well to make sure eveything is covered
  4. Arrange on a baking sheet or put in a large oven-proof bowl and bake about an hour, or until chicken registers 180 degrees
  5. Put on a serving platter, and drizzle with a little more olive oil and sprinkle with parsley
