Green Chile Cheeseburger Pasta

Green Chile Cheeseburger Pasta

Think green chili cheeseburger, meets creamy pasta. This is just a stupidly delicious, and I'm embarrassed how much I ate the day we shot it fo YouTube. And it's topped with crispy panko & diced dill pickles - I mean c'mon!!

Serves 4-6

Ingredients

  • 12 ounces short pasta, rigatoni or shells - you do you
  • 1 pound ground beef, 80/20 would be ideal
  • Kosher salt and coarse ground black pepper
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 4 Anaheim green chilis
  • 1 tablespoon butter
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon Worcestershire
  • 1 teaspoon Dijon mustard
  • 1 cup beef stock
  • 3/4 cup heavy cream
  • 4 ounces American cheese, torn up
  • 1 cup shredded pepper jack
  • 1/4 cup chopped pickled jalapeños
  • 1/2 cup diced dill pickles for finishing

Directions

  1. Heat the broiler to high and put a rack about 5–6 inches below it.
  2. Split the Anaheim peppers lengthwise, remove the stems and seeds, and place them cut-side down, skin-side up on a foil-lined baking sheet, lightly oil them and broil 5–8 minutes, until the skins are well blackened and blistered
  3. Put into a paper or ziplock bag, and seal. Let them steam for 10 minutes. Peel off the loose blackened skin, and dice
  4. While they blacken, melt butter in a skillet over medium heat. Add ½ cup panko and a pinch of salt. Cook, stirring often, for 3–5 minutes, until evenly golden and crisp. Remove it from the pan immediately so it doesn’t keep browning
  5. Cook pasta, about a minute less than the suggested cooking time - reserve about 1/2 cup of the cooking water
  6. Put the beef in a large skillet over medium-high heat, season with salt and pepper and let it actually brown before breaking it up too much. We want crispy beefy bits, not steamed gray hamburger. Remove it when browned, leaving a couple tablespoons of fat behind.
  7. Add the onion and cook until softened and starting to color. Add the garlic for about 30 seconds, then the green chiles. Let those cook for a couple minutes so everything gets a little roasty.
  8. Add Worcestershire and Dijon, then the beef stock. Scrape up everything stuck to the bottom and let it reduce for a couple minutes.
  9. Turn the heat down and add the cream. When it’s gently simmering, add the American cheese and stir until smooth. Add the cheddar a handful at a time.
  10. Return the beef, add the pasta and toss everything together. Loosen with pasta water as necessary until it’s glossy and stupidly creamy, not thick and gluey.
  11. Stir in the pickled jalapeños
  12. Serve topped with the crispy panko and dill pickles
