Green Eggs & Ham

30 Days of Eggs - Day 2

I've been making this forever, without the meat though. But when I had a little leftover pepperoni and salami a few weeks ago - it just seemed a no brainer. This one I specifically bought capicola for, but any meat will do - and holy shit is it delicious.

Makes 1

Ingredients

  • Butter
  • 1 ounce capicola, chopped (or any Italian style meat)
  • 1 egg
  • 1 tablespoon pesto
  • Salt & pepper
  • 2 thin slices provolone
  • 2 tablespoons grated Parmesan cheese
  • Coarse ground black pepper

Directions

  1. Melt the butter in a small non-stick pan over medium heat, and add the meat
  2. Cook until just getting crispy, beat the egg with the pesto and a good pinch salt & pepper
  3. Pour into the pan, and tilt so it spreads out round, cook until almost set then add the provolone
  4. Carefully fold over 2 sides to create a long omelette, plate seam-side down and top with Parmesan and lots of pepper
