Honey Garlic Bacon Wrapped Chicken

Ingredients

  • 6 boneless, skinless chicken thighs
  • 6 slices bacon
  • Kosher salt and fresh ground black pepper

Honey Garlic Glaze

  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1–2 teaspoons sriracha
  • 1/2 teaspoon red pepper flakes

Directions

  1. Season chicken lightly with salt and pepper
  2. Wrap each thigh with a slice of bacon, slightly overlapping. Secure with a toothpick if needed
  3. Preheat iven or smoker to 275
  4. Cook chicken approximately 45 minutes, until the bacon has started to render
  5. While that’s going, combine glaze ingredients in a small pan over medium heat. Simmer 3–5 minutes until slightly thickened and glossy.
  6. Brush the chicken with glaze and continue cooking another 20–30 minutes, brushing once or twice more, until the chicken is cooked through and the glaze is sticky
  7. Turn the heat up to 400 or transfer to a hot grill or broiler for a few minutes to crisp the bacon and caramelize the glaze
